Clean Eating Banana Applesauce Bread

Eating "clean" refers to eating foods closest to their natural state. I try very hard to make mostly clean meals for our family. I don't always succeed, but for the better part of what we eat at home, our meals are clean. The original recipe came from The Eat-Clean Diet Cookbook by Tosca Reno. It has many great recipes, but one of my favorites is the following recipe for Banana Bread. I have tweaked it a little to my liking and am only including the way I cook it, but if you would like to, check out the books by Tosca Reno. Another great source is the new Clean Eating magazine that comes out four times a year.

Banana Applesauce Bread

Ingredients:
1 cup all-purpose flour
1/2 cup whole-wheat flour
1/2 cup rye flour
1/2 cup Splenda brown sugar
1 Tbsp baking powder
1 tsp cinnamon
1/4 tsp baking soda
4 egg whites, beaten until fluffy
1 cup mashed bananas (about 2 bananas)
1/2 cup light soy milk
1/3 cup unsweetened applesauce
1 tsp vanilla
Cooking spray

Directions:
1. Preheat oven to 350 degrees. Lightly coat a 9 x 5-inch loaf pan with cooking spray.

2. In large bowl combine dry ingredients. In another medium bowl, beat egg whites until fluffy. Then pour bananas, soy milk, applesauce and vanilla into a large bowl.

3. Add dry ingredients to wet and mix until just blended. Fold in egg whites. Pour into prepared loaf pan. Bake for 55 minutes. Makes 10 servings.
